No, I haven’t seen the light, I’m referring to dinner — the daily triumph of coming up with some kind of reasonably varied, edible fare against the towering odds of differing tastes, the restricted selection of groceries here in the Middle of Mexican Nowhere, inadequate refrigerator space, and limited funds.  I’ve tried keeping track of menus for future reference in various notebooks before, but they always seem to go astray just when I need them, so I decided to put it here, for my own benefit and for anyone else who might be interested.  New entries will be added at the top of the list, immediately below.

* Breaded pork chops, zucchini with parmesan, garlic/olive oil spaghetti, sliced cucumbers and tomatoes from garden
* Potaje de garbanzos (garbanzo/pork/chorizo/potato stew, very Spanish), tortillas, sliced cucumbers from garden
* Beef parmagiano, marcaroni with parmesan and butter, salad of green and yellow peppers
* Smoked pork chops, pinto beans, leftover rice, green beans with onions and bacon
* Stuffed chiles (poblano chiles stuffed with refried bean/onion mixture, covered with jack cheese and sliced tomatoes and baked)

* Chicken scallops with mushrooms and lemon, linguine with garlic and oil, broccoli with lemon, sliced cucumber from the garden

* Sopa de tortilla

* Poc chuc (Yucatecan grilled pork) with black beans for him; shrimp with rice for me (the Mexigringo doesn’t eat fish), sliced cucumbers (both)

* Scrambled eggs, chorizo español, fried potatoes

* Pork chops with bananas and rum, coleslaw

* Yucatecan chicken fried in achiote with pasta shells cooked in chicken broth for him, garlic shrimp for me

* Breaded pork chops, broccoli with lemon, garlic pasta, salad (lettuce from trip to city)

* Herb-coated chicken scallops, pasta with tomato-cream sauce, zucchini with parmesan, salad (lettuce from trip to city)

* Lasagne, salad (lettuce from trip to city)

* Carnitas tacos out, lunch on shopping trip to city

* Pizza, sliced cucumbers

* Sopa de cuitlachoche, cucumber salad

* Sopa de tortilla

* Beef slices parmagiano, garlic spaghetti, zucchini and carrots with parmesan

* Carne asada tacos out

* BBQ spare ribs, potato salad, coleslaw

* Pork loin sandwiches out

* Frijol con puerco (Yucatecan dish of pork and black beans)

* Frijol con puerco

* Smoked pork chops, potato salad, cucumbers with sour cream

* Navajo tacos

* Spaghetti carbonara, carrot salad, sliced tomatoes from the garden

* Carne asada, pinto beans, sliced tomatoes, tortillas
